胰島素（insulin）是胰島β細胞分泌的蛋白質激素。胰島素是機體內唯一降低血糖的激素，同時促進糖原、脂肪、蛋白質合成。胰島素是由二條多肽鏈組成。A鏈含有21個氨基酸，B鏈含有30個氨基酸，二鏈通過二硫鏈相互連接。血液中胰島素的半衰期約為7～15mins。胰島素是治療糖尿病的常用藥物之一，目前臨床上所用的胰島素多從豬、牛等動物胰腺中提取。
